🧂 Ingredients
1 family pack boneless, skinless chicken thighs
1 pack Hawaiian rolls
Pepper jack cheese, sliced
Chick-fil-A sauce
Caribbean jerk marinade (Great Value or similar)
Marinate the Chicken
Place chicken thighs in a large freezer bag and cover with Caribbean jerk marinade.
Refrigerate for at least 5 hours, preferably overnight for maximum flavor.
Fire Up the Grill
If using a kettle grill, start your coals on one side for indirect heat.
For propane grills, light only the outer burners.
Target grill temp: 275–300°F
Grill the Chicken
Place chicken on the indirect heat side of the grill.
Close the lid and cook for 25 minutes.
Flip/rotate and cook for another 15 minutes, or until internal temp reaches 165°F.
Add the Cheese
Place sliced pepper jack cheese on each thigh.
Close the lid and let melt for 5 minutes.
Assemble the Sliders
Slice larger chicken pieces in half.
Place each piece on a Hawaiian roll with a generous squirt of Chick-fil-A sauce.
Serve hot, preferably with a cold drink and a Hog Call.
