Smoky, tender, and sauced just right. These ribs are an easy crowd-pleaser for game day or backyard hangs — especially when finished over charcoal on the Weber kettle.
1 family pack boneless country-style pork ribs
Yellow mustard (binder, optional)
Your favorite BBQ rub (or mix of brown sugar, paprika, salt, pepper, garlic, onion, chili powder)
1 cup BBQ sauce (sweet or spicy, your call)
Apple juice or beer (for wrapping)
Hickory or apple wood chunks (for smoke)
Season the Ribs
Pat ribs dry and lightly coat with mustard
Generously apply BBQ rub on all sides
Set Up the Grill
Light coals on one side of the kettle for offset (indirect) cooking
Add 1–2 chunks of wood for smoke
Target grill temp: 275–300°F
Cook Indirect
Place ribs on the cool side of the grill
Close the lid and cook until internal temp hits 150–160°F (about 60–90 minutes)
Wrap & Tenderize
Place ribs in foil with a splash of apple juice or beer
Return to grill and cook until ribs reach 190–195°F and probe tender (30–45 minutes)
Glaze with Sauce
Unwrap ribs and place back on indirect heat
Brush with BBQ sauce and let cook uncovered for 7–10 minutes, until sauce is set and caramelized
Rest & Serve
Let ribs rest 10 minutes before serving.
